I have been wanting to make recipes with dragon fruit all summer and I finally did! Dragon fruit is very light in flavor, but brings fun texture and color to your dishes.
I made this dragon fruit simple syrup following a basic simple syrup recipe.
Heat equal parts water and white sugar over low heat until the sugar dissolves. For this recipe, I used ½ cup water and ½ cup sugar. Pour the warm syrup into a mason jar about twice the size as you need. Cube half of a washed dragon fruit and add to the mason jar. Make sure you leave on the pink rind. Allow to sit out for at least 30 minutes then put in the refrigerator for 3-4 hours. The flavor infuses best when the syrup is still hot, but I prefer my syrup cold when I use it.
Remove the dragon fruit chunks from the syrup. You’ll notice the syrup has turned hot pink! I think this is my favorite part of the recipe. Since the dragon fruit doesn’t have a ton of flavor, at least you get an awesome color out of it!
